  • The influence of durian (Durio zibethinus Murray cv. Monthong) on conditioned taste aversion to ethanol

    2012, Food Chemistry
    Citation Excerpt :

The hypothermic response in the same groups, detected with acetaldehydemia, suggests that a disulfiram-ethanol like reaction (DER) is most likely involved in the CTA mediated by durian or cabbage. Further, the present study supports the central role of acetaldehyde, rather than ethanol itself, in mediating the DER as was also reported by Peachey, Zilm, and Cappell (1981) and Tottmar and Hellstrom (1979). With repeated ethanol challenge, the manifestations of the DER as well as blood acetaldehyde levels, were generally reduced, but not totally abolished (Fig. 3, Ch 5), consistent with the observations of Peachey et al. (1981) and Tabakoff, Cornell, and Hoffman (1986).
